im not a teacher but i think its coz phonics and phonetics are greek words and they use an ‘F’ sound for ‘PH’

Hiya,

its a roman mispronounciation of the greek “phi” as “fi” which carried over into english and some other european languages but not all hence

we phone with a phone whereas in some counties you fone with a fone 🙂
